Ingredients:

  • 1 cup of cooked and mashed potatoes

Instructions:

  3. Add the butter, olive oil, salt, and pepper to the pot and cook for 5 minutes, or until melted.
  4. Add the cooked potatoes to the pot and cook for 5 minutes, or until heated through.
  5. Serve immediately.

Tips:

  • For a richer lunch, add 1/2 cup of cheese or bacon to the pot.
  • Serve with a side of crusty bread or a salad.
  • Leftovers can be stored in the refrigerator for up to 3 days.

  • Chicken: Add 1 pound of cooked chicken, chopped and browned, to the pot along with the vegetables. Cook for 10 minutes, or until the chicken is cooked through.
  • Fish: Add 1 pound of cooked fish, chopped and browned, to the pot along with the vegetables. Cook for 10 minutes, or until the fish is cooked through.
  • Vegetarian: Add 1 cup of chopped vegetables, such as broccoli, cauliflower, or bell peppers, to the pot along with the other vegetables. Cook for 10 minutes, or until tender.
