Ingredients:

  • 1 kg of pork shoulder, cut into 2-inch pieces

  • 1 teaspoon of salt

  • 1 (15-ounce) can of diced tomatoes
  • 1 (15-ounce) can of tomato paste
  • 1 tablespoon of chopped fresh parsley

Instructions:

  1. In a large pot, brown the pork shoulder on all sides.
  2. Add the onion, garlic, olive oil, oregano, thyme, black peppercorns, salt, and black pepper. Cook for 5 minutes, until the vegetables are tender.
  3. Add the diced tomatoes and tomato paste. Simmer for 15 minutes, or until the tomatoes are softened.
  4. Add the browned pork shoulder and parsley to the pot. Simmer for 5 minutes, or until the pork is heated through.
  5. Serve over rice or pasta.

Tips:

  • For a richer dish, use a combination of different cuts of pork, such as ribs, shoulder, and belly.
  • You can also add other vegetables to the dish, such as carrots, celery, or potatoes.
